Fruits

Botanically speaking, fruit is the part of a plant that develops from ovary of the flower and a sweet and fleshy product of a tree or other plant that contains seed and can be eaten as food.

For culinary purpose, fruits can be divided into various groups.

  • Stone Fruits

Peaches, Apricots, Cherries, Plums, Avocado using for desserts, jams, pies, puddings and garnishes.

  • Hard Fruits

Apple varieties and Pears.

  • Soft Fruits

Raspberries, Strawberries and Gooseberries are used as desserts, Currents, Black berries use in pies and puddings. They are using for jam and flavorings.

  • Citrus Fruits

Orange, Lemon and Grapefruits are usually cooked except for Marmalade, Lemons and Limes are used for flavoring and garnish in certain fish dishes. Orange used for flavoring and garnish in certain poultry and pork dishes.

  • Tropical and Other Fruits

Bananas, Star fruits, Dates, Grapes, Guavas, Kiwi fruits, Lychees, Mangoes, Mangostine, Passion fruits, Pineapple, Papaya, Rambutan, Rhubarb.

  • Melons

Honeydew melon, Cantaloupe, Watermelon.

Purchasing points of fruits

  • Color of the fruit.
  • Freshness of the fruit.
  • Weight of the fruit.
  • By the sound.
  • Unblemished.
  • Firmness of the fruits.
  • Smell of the fruits.
  • By shaking.
  • Shrinkage of the fruits.

Ways of introducing fruits into the kitchen

  • As a dessert.
  • As a beverage.
  • As a salad or appetizer.
  • As a pickle or a chutney.
  • As a jam.
  • As a garnish.
  • As an accompaniment.
  • As a dressing or sauce.
  • As a tenderizing agent.
  • As a liquor or wine.
