Breakfast

The word Breakfast could be broken down in to Break – Fast meaning the first meal for the day after a night’s sleep.

Hence a proper balance meal with adequate nourishment is a must for the day ahead. Breakfast was a very substantial meal, consisting of six to seven courses including such items such as chops, steak, liver, fish etc.… But modern trend of breakfast has changed to a nutritive smaller break fast termed as continental breakfast.

There are four types of breakfast served in most hotels.

  1. Continental Breakfast.
  2. English Breakfast.
  3. American Breakfast.
  4. National Breakfast.

In Many Sri Lankan hotels, in addition to these a Sri Lankan Breakfast comprising of Sri Lankan Breakfast items also is generally served. This could be termed as National Breakfast which would vary from country to country.

Continental Breakfast

This is rather a light Breakfast which consist of:-

Fresh Fruits / Stewed Fruit or Fruit Juices.

Breakfast Breads, Croissants, Brioches, Toast, Danish, Biscuits, with Butter, Marmalade, Honey, Golden syrup, Jelly preserve.

Hot Beverages:- Tea, Coffee, Cocoa, Hot Chocolate, Milk, Tea Latte, Coffee Latte.

Sometimes a slight variation occurs in certain countries such as Germany and Austria where a soft  boils egg are served and in Switzerland and Holland Cheese may be served with Continental breakfast.

English Breakfast

The English Breakfast is a substantial meal which consists of number of courses, with a choice of dishes from within each course. The extent and variety of an English Breakfast menu will obviously depend on the type establishment in which it served. A full English breakfast menu may sometimes consist up to eight courses. However, today most hotels offer an English Breakfast comprising of the following items.

Fresh Fruits / Stewed Fruit or Fruit Juices.

Cereals such as Corn flakes, Coco pops, Coco crunch, Fruit loops, Porridge, Oats with warm / cold milk, sugar.

A fish preparation (Sole, Herrings, Kippers, Salmon).

Eggs (Fried / Boiled / Scrambled / Poached / Omelets) made to order with Ham, Bacon or Sausages.

Slightly fried Liver, Kidney- (Chicken, Beef, Lamb, Pork).

Breakfast Breads, Croissants, Brioches, Toast, Danish, Biscuits, with Butter, Marmalade, Honey, Golden syrup, Jelly preserve.

Hot Beverages:- Tea, Coffee, Cocoa, Hot Chocolate, Milk, Tea Latte, Coffee Latte.

American Breakfast

American Breakfast is even heavier than the English Breakfast. The reason being after an American Breakfast a very light lunch is to be served.

Fresh Fruits / Stewed Fruit or Fruit Juices.

Cereals such as Corn flakes, Coco pops, Coco crunch, Fruit loops, Porridge, Oats with warm / cold milk, sugar.

Waffles, Muffins, Pancakes with Melted Butter and Syrup or Honey.

A fish preparation (Sole, Herrings, Kippers, Salmon).

A small portion of Steak / Meat / Ham burger / Sausage Rolls with accompaniments of Grilled Tomatoes, Mushroom etc.

Eggs (Fried / Boiled / Scrambled / Poached / Omelets) made to order with Ham, Bacon or Sausages.

Breakfast Breads, Croissants, Brioches, Toast, Danish, Biscuits, with Butter, Marmalade, Honey, Golden syrup, Jelly preserve.

Hot Beverages:- Tea, Coffee, Cocoa, Hot Chocolate, Milk, Tea Latte, Coffee Latte.

This type of Breakfast is seldom served in hotels. Due to length of Breakfast chilled water should be served throughout the meal.

Sri Lankan Breakfast

Most Sri Lankan hotels serve a Sri Lankan Breakfast comprising of typical Sri Lankan Breakfast items along with their traditional accompaniments and with tea as a beverage.

  • Herbal Porridge.
  • Milk Rice.
  • Rotti.
  • Hoppers.
  • String Hoppers with Kiri hodi.
  • Pittu with Coconut milk.
  • Yams.
  • Pulses.

With accompaniments such as :-

  • Beef Curry.
  • Chicken Curry.
  • Fish Curry or Fish Ambulthiyal.
  • Katta Sambol.
  • Seeni Sambol.
  • Pol Mallum.
  • Onion Sambol.
  • Coconut Sambol.

Breakfast Service

In the most hotels the current trend is to serve a continental Breakfast rate of which is included in the room rate and to serve English or American Breakfast on the A la carte. Breakfast may be served in the hotel coffee shop, dining room, open air terrace or room service. Separate Breakfast room were also popular. Room service breakfast would be handled by the room service staff. Many hotels adopt Breakfast buffet for its convenience in service and for the possibility in offering guest a wider range of food.

New trends in Breakfast

  • Having separate healthy corner:– Low fat milk, Healthy butter, Salads, Thin soups, Shooters.
  • Having  separate sandwich corner.

Point to be considered when planning a breakfast buffet

  • You must practice basic principles of menu planning.
  • Buffet layout according to the nationalities and seasonality.
  • Separate decor systems, lightning and elevations.
